Albuquerque's Artisan Pantry

Every loaf we bake carries the weight of a craft we refuse to compromise.

Hand-milled flours, sourdoughs nurtured over 48 hours, and pantry staples sourced from the high desert's most trusted growers — this is food made the way it should be, without shortcuts.

Our Story

Built on a simple conviction: food should taste like something was thought about.

Shape Up Nutrition started as a question most bakers won't ask out loud — why does good food have to be complicated? We set out to prove that the best flour, the longest fermentation, and the freshest grains don't need a factory to be reliable.

Every batch at our Lomas Boulevard location is mixed by hand, fermented slowly, and baked in small quantities. Our whole-grain flours are stone-milled in-house. Our pantry items — raw honey, heritage grains, cold-pressed oils — are sourced from growers we know by name.

This isn't convenience food dressed up. It's food that respects the time it takes to become something worth eating.

From the oven to your shelf — every product carries the same standard we set for ourselves.

Golden sourdough boule with a deeply caramelized crust

Artisan Sourdough

Bags of stone-milled whole wheat and spelt flour on a counter

Stone-Milled Flours

Whole wheat, spelt, rye, and einkorn — milled fresh in small batches. No bleaching, no enrichment, no waiting.

Assorted croissants and pastries on a marble surface

Lamination & Pastries

Butter croissants, pain au chocolat, and seasonal fruit tarts — made daily from scratch using French technique and local butter.

Pantry staples including honey, oils, and grains arranged on a wooden table

Pantry Essentials

Raw honey from New Mexico apiaries, cold-pressed olive oil, heritage grains, and specialty salts — everything you need to cook from scratch.

Fresh flatbreads and focaccia on a rustic board

Flatbreads & Focaccia

Rosemary sea-salt focaccia, whole-wheat lavash, and olive oil flatbreads — baked fresh each morning, ready by afternoon.

Seasonal baked goods including fruit tarts and cakes

Seasonal Specials

Limited batches that follow the Albuquerque growing calendar — fig and almond cake in late summer, citrus sourdough in winter, and more.

Our Philosophy

The standard isn't high because we're pretentious. It's high because the alternative is disappointing people who trust us.

Time Over Speed

We don't rush fermentation. We don't use improvers to compensate for shortcuts. The bread tells you what we did — and it always tells the truth.

Source With Intent

Every grain, oil, and honey jar on our shelves has a farm name and a contact. If we can't tell you where it came from, it doesn't go on our shelf.

Small Batches, Consistent Quality

We bake in quantities that let us inspect every loaf. If a batch doesn't meet our standard, it doesn't leave the kitchen — regardless of demand.

Nutrition Without Compromise

Whole grains, natural sweeteners, and real ingredients mean your food nourishes you — and tastes like it was made by someone who cares.
